Happy Easter Weekend

Did you see my Aunt Julie on The Drew Barrymore Show Monday?  Wasn’t she FABULOUS!!!! It was just so exciting!  I’m making that pasta for dinner tomorrow night for Good Friday.  I ate it cold at A. Julie’s house and it was amazing.  Can’t imagine how good it will be warm.  The kids are excited too because it looked so good while they were making it on the show.  My kids were on their 973rd day of Spring Break so they got to watch it with me!

Can you believe Sunday is already Easter again?!?!?!!!  How?  This Easter will be a little bigger than last Easter but not much.  Last Easter I made a huge spread for the 4 of us and we FaceTimed with my mom, sister and brother while we ate brunch; FaceTimed with my in-laws during dessert.  This Easter we are going to my mom’s house but it is just the four of us, my brother, one aunt and one uncle.  Much smaller than “normal” but still fun and celebratory.  I’m bringing the Hashbrown Casserole (pg. 74 in the cookbook) and some cookies.  There will of course be Ham, Egg Casserole and Orange Fruit Salad because it is not Easter without those four things.  All recipes can be found in the cookbook.  There is always a lot more at our Easter brunch but those are the four things I LOAD onto my plate.

But, if you want some more ideas for this weekend I thought I’d throw some out so here we go.  If you are an Easter Brunch family maybe some of these will fit the bill (plus a ham):

If you are an Easter Dinner person really the cookbook is the best place to look. Ham, Beef Tenderloin, Lamb Lollipops, etc… But, if I’m just looking at blog recipes, try some of these:

Roasted Carrot Soup
Au Gratin Potatoes
Roasted Aparagus
Herb Roasted Potatoes
Roasted Potatoes and Brussels Sprouts
Easy Oven-Baked Risotto (would be great with roasted spring veggies; read the entire blog post to see how to do that.)

And dessert is acceptable all day on Easter regardless of your brunch or dinner status:
