Thanksgiving is just around the corner. I can’t wait. Here is a perfect side dish option.
I love these green bean bundles! You can make them with whole canned green beans or fresh green beans that you blanch first. I take the super easy route and use the green beans in the microwaveable bag.
Green Bean Bundles
Serves 6-8
Ingredients:
7 slices Bacon (not thick cut), cut in half
12 oz steamer bag of Green Beans
Tooth picks
Cajun Seasoning
Preheat oven to 400
Place an oven proof cooling rack on a baking sheet.
Place the ½ slices of bacon on the rack and cook bacon for about 10 minutes.
Meanwhile, cut some vents in the green bean bag and microwave for 90 seconds.
Leave the bag in the microwave while you wait for the bacon to be done.
Remove the bacon from the oven and wait a couple minutes until it’s cool enough to handle.
Grab a little handful of green beans (about 4-6 beans) and roll the bacon around it; secure with a toothpick.
Place bundles back on the rack.
Sprinkle heavily with Cajun seasoning (you can use another seasoning if you prefer)
Bake an additional 10 minutes or until bacon is done (the green beans will wrinkle a little but you don’t want them to shrivel).
