Salmon with Greek Salad

Happy Summer! I know it isn’t technically summer yet but Memorial Day has passed and my kids are out of school. That all equals summer to me!

Our first official week of summer has been like playing catch-up. I’m not on my game. I can’t keep activities straight, or the timing of activities… for my children or my husband.

I bought good stuff for dinner on Wednesday (steak and salmon) and I was excited to try out a new cooking method. I forgot husband had golf every Wednesday night. How did I forget that? I don’t know. That’s ok, I could make it Thursday. I forgot husband had a happy hour for work Thursday night. Well, I can keep the steak another day because it’s vacuum sealed. But the salmon; I think we need to eat that salmon.

Yesterday I wanted something light, delicious and summery. A few days ago I was scrolling through Instagram and saw a Greek salad with a piece of salmon on top. I think it was from @loveandlemons but I’m not 100% on that. Anyway, it was delightfully colorful, looked delicious and I had all the ingredients I would need at my house.

So, I threw the salmon in the oven, chopped some veggies and cheese and voila! We had dinner. *disclaimer- I didn’t have fresh dill but I would have definitely added a little to the salad and fish if I had it on hand

This is healthy, light and goes great with a glass of chilled wine! It’s also gluten free. I do wish I would have had a baguette to go with it (so then… not gluten free) to scoop and soak but oh well. Next time.

If you can’t do fish (like my sister) you could sub some chicken breast. If you don’t want any meat I bet it would be great with some chickpeas mixed in. Give this dish a try and let me know what you think!

p.s. I love these olives from Aldi. I used them in this salad and it was great. I have one daughter who doesn’t like “brown” olives so she was able to pick out the ones she liked.

 

Salmon with Greek Salad

Serves 2-3

Ingredients:

For the Salmon:

1 lb Salmon

2 tsp Olive Oil

Kosher Salt

Pepper

Garlic Powder (Granulated Garlic)

3-4 Lemon Slices (optional)

Fresh Dill (optional)

 

For the Salad:

1 c Grape Tomatoes, sliced in half

1 c English Cucumber, sliced in rounds then quartered

½ c Kalamata or Assorted Olives, sliced in half if large

2 oz or ¼ c Feta Cheese, small dice or crumbled

1 tsp fresh chopped Dill (optional)

2 T Olive Oil

1 ½ T Red Wine Vinegar

Kosher Salt, very small pinch

Pepper

 

For the Salmon:

Preheat oven to 350

Line a baking sheet with foil

Rinse the salmon and pat dry

Place on prepared baking sheet, drizzle with olive oil and sprinkle with salt, pepper and garlic powder.

Arrange lemon slices on top of the fish.

Place in oven and bake for about 20 minutes or until cooked through*

*You can cook the salmon however you want: grill,steam, bake, pan sear… this is just what I did.

 

For the Salad:

Combine the tomatoes, cucumbers, olives and feta in a bowl.

Sprinkle the dill, olive oil and vinegar over the salad; toss to combine.

Add the tiniest pinch of salt (the olives and cheese are very salty) and a few grinds of pepper; toss again.

 

To Serve:

Divide the salad up onto plates and top each with a piece of salmon.

Enjoy a healthy, delicious, flavorful meal! Add some wine and bread to balance out that much healthy.

  1. You always find the best ingredients at Aldi’s for your recipes, this dish sounds wonderful, salmon is my favorite.
