Vacation in a Glass

I find myself ready for fall. It was unseasonably cool a couple of weeks ago; highs in the low 80’s, lows in the 60’s. I made chili. I know it wasn’t chili weather but it was cloudy too and I wanted some.  I also bought some new boots at the Nordstrom Anniversary Sale. I was just trying them on with jeans and a sweater to make sure I really like them. I can’t wait to wear jeans and a sweater again. BUT… I need to stop wishing time away.

So, while we have a few more weeks of summer left, let’s enjoy it! I plan to post very summery things for the next few weeks. A theme month if you will. Let’s call it “Ode to Summer” or “Summer Finale” or please think of something better and that is what we will call it.

First up: Vacation in a Glass. Now, I like to have an adult beverage every once in a while but I am pretty limited on what I like. I like beer. Plain old lager, nothing fancy. Budweiser please. I like wine. Almost all the wines (I’ll skip sauvignon blanc, prosecco, anything sweet). I like some vodka drinks. And I love my favorite vacation drink: Malibu with pineapple juice. Did I invent this drink, of course not. I did however give it my own name.  You guessed it:  Vacation in a Glass.

I think people forget about Malibu and pineapple or they feel it’s too frou-frou. So what! It’s delicious. And you will truly feel like you are on vacation as soon as you take your first sip. The coconut flavored rum mixed with the pineapple juice is simply perfection. So drink up and enjoy the last few weeks of summer!IMG_1303

Vacation in a Glass:

Ingredients:
Malibu Rum
Pineapple Juice
Ice
Optional Garnishes- straw, pineapple wedge, little umbrella

Fill a glass with ice.
Add one part Malibu to three parts pineapple juice (or find your perfect ratio).
Give it a stir.
Garnish if desired.
