Easy Green Bean Casserole

When you are having everyone over for a barbecue or say… Thanksgiving dinner, there is always A LOT going on. Clean the house, set the table, buy ice, make yourself (and your children) look somewhat presentable, over-stock the wine and, of course, make the food. It is nice to have one simple dish that won’t cause any stress. Enter the green bean casserole.

You can make a fancy version of green bean casserole from scratch and it will be delicious! This is the fast, easy version that anyone can throw together at a moment’s notice. Guess what, it is still delicious and always a crowd pleaser!

This is the “small” version of this recipe that only serves 4-6 people. But, it is very easy to double or triple for a large party. Since I normally only make this for the four of us, I buy the small 2.8 oz container of French fried onions.

I just recently found the small container in the store and I was so excited. I used to buy the “normal” 6 oz container but this small one is the perfect size for the recipe below. If you are buying the normal container you will just use half of it.  Here you go…

Easy Green Bean CasseroleIMG_8236

Serves 6

Ingredients:
2- 14.5 oz cans Low Sodium Green Beans, drained
1 can Cream of Mushroom Soup
Salt & Pepper to taste
¼ tsp Garlic Powder (optional)
¼ – ½ c Milk (optional)
1 cup Shredded Colby Jack Cheese, divided
2.8 oz container French Fried Onions

Preheat oven to 350

In a medium mixing bowl combine drained green beans, soup, salt, pepper and garlic powder (if using); stir together.
If you want it a little thinner, add some of the milk until you get your desired consistency.
Add 1/3 cup of cheese and ½ cup of French fried onions; mix.

Spray a casserole dish with nonstick cooking spray (an 8” x 8” glass dish works great).
Spread green bean mixture evenly into prepared casserole dish.
Top with remaining cheese.
Bake for 25 minutes.

Remove from oven and top with remaining French fried onions.
Put back in the oven and bake for an additional 3-5 minutes until the onions are golden brown (keep an eye on them, they can burn quickly).
