Sometimes the thought of cooking dinner is just too much; even for someone who loves to cook.
My sister came for a visit earlier this summer and was here for almost 3 weeks. Unfortunately, she wasn’t at my house for most of that time but she was close by and we saw each other a ton, so that is what matters (apparently). Any-who… she was hanging out at my place getting ready to head back to my mom’s and I was complaining about not having the energy for dinner. She kept throwing out all these easy options but they still just seemed overwhelming that day. Then she said, “Just make some pizzas- buy some pizza dough…” Well, that was still too much but it made a little light bulb go off.
I remembered they sell packages of Naan at the grocery store. They come in packages of four and I thought, “There are four of us” (say it in the voice of Andre the Giant from The Princess Bride). And, I just had little bits of everything in the fridge. I had a little bit of pasta sauce left over. I had 1/2 a zucchini. I had a handful of sautéed mushrooms left over, an already opened package of shredded mozzarella cheese… and so on and so forth. And it was like a weight had been lifted off of my shoulders. I can handle pizza for dinner tonight! Not only that but my kids will think it is AWESOME that they get to make their own pizza. Everybody wins!
Now, as happy as I would be with toppings we had at home, my husband is not into veggie pizzas so much. Remember from a previous post how convenient it is to use the grocery store salad bar? Salad bar saves the day again! I went and filled a little soufflé cup with pepperoni from the salad bar. It was so light weight the scanner couldn’t weigh it so the checker gave it to me for free! FREE! Free always makes me happy. Now, I’m not saying that is going to happen to you or ever happen to me again but it did make my day.
So, my kids each made a black olive pizza (I always have a can in the pantry). That is all they ever want on pizza, either plain cheese or cheese and black olives. My husband made something, I’m not sure what but I know it included pepperoni and I made this delicious veggie pizza below…
Naan Pizza
1 piece Naan
Pizza Sauce or leftover Pasta Sauce
Shredded Mozzarella Cheese
Zucchini Slices
Sautéed Crimini Mushrooms
Feta Cheese Crumbles
Italian Seasoning
Fresh Basil
Preheat the oven to 400
Layer the naan with each ingredient in the order it is listed. I just cut the basil with my kitchen shears right over the pizza.
Bake directly on the rack for about 10 – 12 minutes or until the cheese is browned and bubbly.
That’s it!
I also grabbed a bag of Caesar Salad while I was at the store. So, this was a complete meal that was thrown together with minimal effort, made everyone happy and cleaned out the fridge. The trifecta!

- 1 piece Naan
- Pizza Sauce or leftover Pasta Sauce
- Shredded Mozzarella Cheese
- Zucchini Slices
- Sautéed Crimini Mushrooms
- Feta Cheese Crumbles
- Italian Seasoning
- Fresh Basil
Instructions
- Preheat the oven to 400
