Heirloom Tomatoes… Woo Hoo!

I’m so happy they are finally here!!!!  I could live on homegrown tomatoes all summer long, especially heirloom tomatoes.  And I almost think the uglier they look, the better they taste.

Now, I love a Caprese Salad.  I mean, who doesn’t? Right.  I will eat a ton of them this summer and I’m sure at some point I will post a Caprese Salad recipe.  But not today.

Summer tomatoes are so wonderful all you really need to do is slice them and sprinkle them with some salt.  Right there is a delicious treat.  But my two favorite ways to eat summer tomatoes are listed below.  Today you are getting two recipes (if you can even call them that) for the price of one.

Ingredients:
Tomatoes
Salt & Pepper
Extra-Virgin Olive Oil
Parsley, chopped

Wash your tomatoes and cut them into thick slices
Arrange your tomatoes on a plate or platter; sprinkle with salt and pepper
Drizzle with a little bit of olive oil
Sprinkle with fresh chopped parsley

So beautiful, simple and delicious. I know people always go to basil when topping tomatoes; I top tomatoes with basil, it is delicious (I even used some when I last made this dish). But, try with just some fresh, clean parsley. It is amazing.

You can do this same thing with heirloom grape tomatoes.  Slice them in half, put them in a bowl and follow the rest of the steps.  Just don’t use too much oil.  You want the tomato flavor to come through.

Summer Tomato Sandwich

This is basically the same as the side dish above, just put on bread

Ingredients:
Your Favorite Good Bread (I like a French or Country White from a great bakery)
Goat Cheese, at room temperature
Tomatoes, sliced
Salt & Pepper
Extra-Virgin Olive Oil
Parsley, chopped

Toast your piece of bread
Spread with a thin layer of goat cheese
Arrange tomato slices on your open-faced sandwich
Sprinkle with salt & pepper
Drizzle with olive oil
Sprinkle with fresh, chopped parsley

Now take a bite of heaven.  My favorite lunch and like I said before, I could eat it every day all summer long.
