Slow Cooker Lasagna for #NoBuyJanuary

How is it going everyone?  I’m hearing some good feedback for No Buy January and I love it!  People have ingredients and are asking what do to with them.  Here are some great generic options for using up a variety of leftovers:

Pastas
Frittata/Omelet/Quiche
Pizzas (check out naan pizza and naan pizza 2.0 for inspiration)
Tartines/Toasts
Grilled Cheese Sandwiches (w/ odds and ends added like spinach, bacon, tomatoes, apples, etc.)
Salads (this salad dressing is great on all salads)
Quesadillas
Fresh juices
Smoothies

Here is a terrible picture of stuff I had in my house the other day. Lots from the fridge, some from the pantry, some from the basement freezer.

As you can (not really) see there’s some frozen meat sauce, a little bit of refrigerated pasta sauce, an assortment of cheeses, fresh greens, cottage cheese and lasagna noodles. (And I still have an entire box of lasagna noodles in the pantry, ugh! I really am going to get better about over buying.)

Anyway… Would I normally use this stuff to make a lasagna? No. Especially the cottage cheese.  Did I use it in the spirit of No Buy January? Yes! And, I made it in the crockpot because it is just so, so easy that way. Check out my little video.

Layer, spread, sprinkle, repeat and done! Cook for 4-5 hours on low and call it a day.

I had 1/2 a loaf of sliced Italian bread in the freezer so I made some garlic bread. I used the greens, some tomatoes and leftover salad dressing from a to-go order the other night and made a little side salad. Done and Done!
