My third tested recipe was this Extra-Cheesy Spinach-Artichoke Dip from @Food52 on Intagram. Here are the reasons I chose this:
- It’s dip season! Baseball playoffs, football games, cooler weather. Give me all the dips; especially if they are warm dips.
- I had at least four recipes for spinach-artichoke dip saved on Instagram. I had to make one of them and this was the first one I scrolled across.
- It is basically 5 ingredients and that means it’s quick and easy. I like quick and easy!
The Grade: A
Ok, this was a great dip! I actually made this following the directions exactly and it was delightful. Do I want to tweak it? Of course I do. And I will make it again soon with my tweaks and get back to you. But, go ahead and make this spinach-artichoke dip now; you won’t be disappointed.
As the name suggests it is extra-cheesy. That being said, what stood out to me the most was all the spinach. This was a thick, hearty dip with so much spinach that it is basically a health food. I don’t know about you, but I love a thick spinach dip. I like creamy but not so creamy that it drips off the chip. This is creamy and hearty at the same time. Excellent consistency.
I was impressed at how perfectly the cheddar melted into the mixture. I feel like cheddar separates a lot when melted. It is not my cheese of choice. But since I was following directions I stuck with it. It worked beautifully. Plus, I got a nice arm workout while shredding the cheddar.
The instructions say to bake uncovered and then broil for the last 4-5 minutes. My husband loved the cheesy top. I liked the top but I don’t think it needed to be broiled. The cheese was plenty browned after 20 minutes of baking in my oven; I will cut out the broiling when I remake it.
