Broccoli Rice Casserole #NoBuyJanuary

The pasta con broccoli from last week was great!  But I still have more frozen broccoli.  What to do? What to do?

A few years ago we went to a Turkey Fry at my cousin’s house.  It was my first time having fried turkey and it was delicious.  But you know what I couldn’t get out of my head, the broccoli rice casserole.  It was cheesy, comforting and absolutely delicious.  I could have eaten the whole pan but I know that is rude… so I refrained.

A couple weeks ago I FINALLY asked for the recipe and I’m so happy she shared it with me!  Not only that, she said I could share it with you.  Thanks Melissa!

This recipe is perfect for #NoBuyJanuary!  I have the broccoli in the freezer downstairs and pretty much everything else in the pantry.  The one specific thing I did have to go buy:  Cheez Whiz.  I have never purchased Cheez Whiz in my life but the recipe was so perfect I wasn’t going to try to mess with it at all.  I did have to ask people in the grocery store where to find it though.  It is in the dairy section near the other cheeses, go figure.  And, I also don’t usually have Minute Rice but sometimes I do.  I will tell you from experience, this recipe does not work with regular long grain rice.  Just go grab a box of minute rice if you don’t have it.  It’s worth it.

This recipe is super simple!  Mix everything together in a bowl, put it in a casserole dish and bake.

DONE!  It is a great side dish.  It feeds a crowd and is so versatile.  Great with almost any meaty main course (turkey, chicken, ham, etc). I can’t wait!!!

Broccoli Rice Casserole

Serves 10-12

Ingredients:
16 oz bag Frozen Broccoli
1 medium Onion, diced
1 can Cream of Chicken Soup
1 can Cream of Mushroom Soup
½ tsp Granulated Garlic (Garlic Powder)
1 stick Unsalted Butter, melted
1 c Water
½ jar Cheese Whiz
2 cups uncooked Minute Rice

Preheat oven to 350
Spray a 9×13 baking dish with nonstick cooking spray.
Mix all together ingredients together in a large mixing bowl until well combined.
Turn mixture into prepared baking dish.
Bake uncovered for 1 hour.
