Naan Pizza 2.0

This is the first week we have all our current activities at the same time: school, violin (twice a week) and choir.  Those last two are new this year.  We aren’t adding any sports until we see how this new schedule is going to settle in (the girls are not sad about this).  All these musical activities are BEFORE school!  Why God Why?!?!!  We aren’t morning people.  The girls actually seem to do ok but husband and I are not at our best in the morning.

We still need some simple dinner plans readily available at a moment’s notice.  Last night we had a doctor’s appointment after school.  That wasn’t over until 5 and luckily we were right next to ALDI which has excellent naan.  You know how I love a naan pizza. When you have no energy for dinner this is a great way to go!

We always have a squeeze bottle of pizza sauce and shredded mozz in the fridge.  These are good staple ingredients to keep on hand because you can make a pizza out of almost anything:  leftover bread, bagel, english muffin, tortilla, pita and of course… naan.

Naan pizzas are always a hit because each person in our family gets to choose his or her own toppings.  The freedom of being able to choose what you eat for dinner goes a long way with children.  My kids eat dinner without complaint.  They like to feel like they are in control (they don’t get control over hardly anything in this house).  They just also have to eat some caesar salad too.  Bags of caesar salad are also available at Aldi and no, Aldi doesn’t pay me.  They should though.

Have leftover zucchini, bacon or sausage? Great, add it to the pizza.  (Tip- I always cook crumbled sausage once a week and keep in the fridge so it is readily available to add to scrambled eggs on school mornings… or naan pizzas).  Have some tomatoes laying around or a can of olives in the pantry; add it to the pizza.  Sometimes we have pretty awesome leftovers and you can get creative!  That’s where we are going with Naan Pizza 2.0!

One glorious day we had so many goodies in the fridge.  We had brie cheese and brie makes everything better.  We also had crimini mushrooms and pancetta.  I minced some garlic and slowly heated it in a little olive oil.  Then I brushed my garlic infused olive oil onto the naan.  I added the mushrooms, pancetta, thin slices of brie and some fresh rosemary.  HEAVEN!!!!!! Aldi did not have crimini mushrooms or chopped pancetta yesterday so I had to rethink my dinner.  I still bought the brie because… ya know… brie.

If you follow me on Instagram you know I made apple butter earlier this week.  That is what I was putting on my pizza!

E wanted a traditional bacon pizza but A loves any reason to have something sweet so I tempted her with the apple butter and very thick slices of cheese; she was game.  I left A’s plain but for some reason I thought fresh rosemary might be a great addition.  I usually stay pretty traditional with my flavor combos but I felt compelled to try this.  I was right, it was sooooo good.  And still delicious with caesar salad; just a great little mini pizza.  Give it a whirl, you won’t be sorry!

Don’t forget how fabulous any of these little naan pizzas would be as an appetizer!  You can cut them into bite-sized pieces and throw them on a platter.

Naan Pizza 2.0

Serves 1

Ingredients:img_5548-1
1 piece Naan
Apple Butter
Brie Cheese, sliced
Fresh Rosemary

Preheat oven to 450
Spread apple butter on naan.
Lay sliced of brie on top.
Sprinkle with fresh rosemary.
Bake on a preheated pizza stone or directly on the rack for 6-8 minutes.

  1. Have to say I love reading your blog. I will think about the apple butter on pizza, but if kids like it I bet really good and I agree about Brie – so good. Thank you for new ideas!
