I have a love affair with ham. My husband doesn’t understand it but it’s real and it’s deep. It’s ingrained through my mom’s side of the family. A phrase my cousin, sister and I are always saying (in our mother’s voices), “We got ham!” It used to be to make fun of them but now it just comes out naturally.
Any-who… a lot of people have ham on Easter. There are many ways to use up leftovers and here is one more. A few months ago I posted the recipe for Creamy Italian Pasta. It is a really easy dish to throw together and uses pancetta. Just swap out the pancetta for diced ham and you have another use for your delicious Easter ham. And don’t forget about Cuban Sandwiches, Eggs Benedict and Frittatas.
