It’s freezing this weekend for millions of Americans. I’m not leaving the house. But if you are, stop by Trader Joe’s today and pick up these four things:
- Miso Ginger Broth
- Shitake Mushrooms
- Bok Choy
- Potstickers. I go for the Pork Gyoza Potstickers but they also carry chicken.




Then do this:
- Clean the mushrooms, remove stem, cut in half. Cut leafy green parts of bok choy into thick “strips.” Save the rest for another use (stir fry later?) Set mushrooms and bok choy greens aside.
- Add broth to a medium pot
- Add mushrooms to pot
- Bring to boil, reduce to simmer
- Add potstickers and bok choy greens to pot. Cook for 3-5 minutes
- Eat

Now, you do you. Add as many pot stickers as you want. I say 4 per person. Some would say more, some would say less. Want to add scallions, carrots, chili oil… go for it. Want to skip the mushrooms and the bok choy… fine. This is supposed to be easy and enjoyable for you! No matter what, it will be warm and cozy.
Trader Joe’s also sells soup dumplings. They will most likely be right next to the gyoza. I’m sure they would be delicious in here but they are more expensive and I like to get more for less. And I just seriously love Trader Joe’s potstickers. They are AMAZING.
