Yes, I have been MIA and there is nothing I can do about that now. I had so many things I cooked over the summer I wanted to share with you but, what can I say, time got away from me. Instead of catching you up; let’s just keep going.
Today marks the first day in at least 17 months my children will be in school for a full week. 17 MONTHS! Don’t worry, they have 2 days off next week. Because, why not? Anyway, here is your back-to-school dinner life saver: Slow Cooker Chicken Tacos!
This recipe is from my best friend. I didn’t ask her if I could share it with you, I’m just assuming she won’t care. So, thanks lady for helping us all out!
This recipe couldn’t be simpler and it is so versatile. If you are dropping 4 kids at 9 different activities, everyone can still enjoy a hot meal. I used this chicken meat for tacos but you can do quesadillas, nachos, taco salad, whatever. I just set up a little “taco bar” and let everyone make their own.
I meant to have sour cream on my taco bar but I forgot to buy it. I had avocados but they were still hard as a rock. I had black olives but I was too lazy to open the can. And you know what, everyone still enjoyed dinner! I made a side of taco rice (from a package) and called it a day. Seriously, so easy and delicious! Enjoy!
Add some taco seasoning to some chicken broth, pour it oven chicken and cook on low for 6 hours. That’s it! And it’s delicious!
Although these are perfect for those hectic nights I can’t help thinking how great they would be for a party by just doubling or tripling the recipe. Especially with football right around the corner. Happy Tailgating!
Slow Cooker Chicken Tacos
1 – 1.5 lbs skinless, boneless Chicken Breasts*
1 c Chicken Broth
3 T Taco Seasoning
Pour the broth into a measuring cup.
Add the taco seasoning to the measuring cup and stir together.
Place the chicken breasts in the slow cooker and pour the broth mixture over the top.
Cook on low for 6 hours.
Shred the chicken with 2 forks and stir.
Turn the slow cooker to “warm” until ready to eat.
*If using more than 1.5 lbs of chicken, start adjusting all the measurements.
