I’m supposed to be in Spain right now with my mom and my sister. But, I am not in Spain. I am at home. You know why. My kids are upstairs virtual schooling and I’m listening to the sweet sounds of a tree being cut down. So, almost the same.
We were supposed to leave last Monday. Instead, I went to my mom’s house and spent the night. We FaceTimed my sister and had a great evening. I bought Spanish meats and cheeses from World Market, ALDI and Trader Joes. I bought Spanish wine from The Wine And Cheese Place.
I wanted to buy dessert too but couldn’t find anything at the store. So to the internet I went…
…And I found Tarta De Santiago. It is a delicious almond cake (and also gluten-free). I used this recipe… which is funny because I think the blogger is actually German. We have a real international delight here! I made half the recipe in a 6 inch cake pan. I think I underbaked it just a bit but no one cared. It was fabulous! I highly recommend you giving it a try. It is super easy and yummy. Just make your cross stencil a lot bigger than mine because we couldn’t even see it.
Any chance someone has a recipe of what to do with leftover chorizo? It was delish but we didn’t eat a ton because we had so many options. I can definitely add it to a big platter night but since it is finally fall, something warm sounds good.

I must say it was a great evening and a real surprise and fun to taste all the treats. It was not Spain but hopefully next year this time. Love and thanks to my daughters for a very special evening.
