Hey Everyone! Sorry I have been away for a few weeks. This holiday season has been a perfect blend of busy and lazy. For me, busy + lazy = Wonderful. I hope yours was as well.
This season I did a pretty good job of mixing my healthy eating with my splurge eating: healthy during the week then a little more relaxed on the weekends (or actual holiday). That all worked until about December 22nd. Then it was bring on all the wine and chocolate! I don’t know about you but… I need some salad.
This ever so slightly adapted salad dressing recipe from Melissa D’Arabian is phenomenal. It has simple, delicious ingredients and is a cinch to make. It is so flavorful, you don’t have to worry about adding a whole bunch of ingredients to your salad. All you need are delicious greens, this dressing and a little salt and pepper and you have the perfect salad. In fact, that is exactly what I served during Christmas dinner.
That being said, you don’t have to keep it simple if you don’t want to. One of my favorite combos is greens, candied pecans, pears and blue cheese. Or you can use it on this steak salad. It is just so versatile.
I wish I had pictures to show you… but I don’t. I forgot to take pictures of pretty much everything this winter break. But, I did make a video of myself making the salad dressing. That also turned out a little bit of a mess. This dressing comes together super fast. I mistakenly made the video on “time lapse” mode which makes the video speed up. So, don’t blink or you might miss it.
Did you catch all that? No? Well, I’ll type it out for you then. Just remember you can double or triple this recipe depending on 1. how much you want on hand or 2. how many people you are serving. A little goes a long way so just keep the leftovers in the fridge. If you don’t have a mason jar you can certainly whisk it all together in a bowl. I just find the mason jar to be the most convenient way to both make and store the vinaigrette.
The Perfect Vinaigrette
Serves 6
Ingredients:
1 clove Garlic, smashed
1 tsp Dijon Mustard
1 T Balsamic Vinegar
Splash Soy Sauce
3 T Extra Virgin Olive Oil
Salt & Pepper
Add all ingredients to a small mason jar.
Put the lid on and shake vigorously.
Let sit at room temperature for at least 20 minutes to let the garlic infuse.
Shake again before dressing salad (making sure not to serve the garlic clove).
The Perfect Vinaigrette
