The Breakfast Stack

Easy. Fast. Scrumptious!  I love the breakfast stack.  It is not fancy; it’s just good and satisfying.  You can make it fancy if you want.  Make waffles from scratch and/or poach an egg.  But the original purpose of The Breakfast Stack is to be quick and tasty.  I’ve been making these since right after college when I lived in my tiny little apartment and had zero dollars.  It was always a treat!  All breakfast flavors in one bite. Here is what you will need:

Eggo Waffle(s) (or the frozen waffle of your choice)
Maple Syrup
Breakfast Sausage
Egg(s)

I’m giving the instructions for one breakfast stack but you will see you can multiply it as many times as you want.

First, slice of a thick hunk of breakfast sausage. They have those lines on the side of the package to give you an idea of how big to slice one patty. I go for 1 1/2 – 2 patties-worth in one chunk.IMG_E8247

Flatten it out into a thin, round patty. Sausage will really shrink and plump in the middle when you cook it so make the patty as flat and large as you can (bigger than the Eggo). Then, fry the sausage patty on both sides. You can see I was also making a little bacon at the same time. #multitasking

Remove the sausage and fry your egg (in the same pan) while you are toasting your waffle.IMG_E8254

When everything is cooked to your liking, start layering:

If you like, sprinkle with a little pepper then dig in and take a bite.

You will get the crispiness of the waffle, the sweetness of the syrup, a hint of spice from the sausage and the creaminess of the egg. Perfection.

The Breakfast StackIMG_8265

Ingredients:
Breakfast Sausage (rec. Jimmy Dean Regular)
1 Egg
1 Frozen Waffle (rec. Eggo)
1-2 T Maple Syrup

Slice off one hunk of sausage (about 1 1/2 – 2 patties worth).
Fry the sausage in a skillet over medium to medium-high heat until cooked through (about 5 minutes per side).
Remove the sausage from the skillet and set aside.
Crack an egg in the same skillet and cook to your liking (I recommend over easy).
While your egg is cooking, pop a frozen waffle in the toaster.

When everything is cooked to your liking, begin stacking:
Place waffle on a plate
Drizzle with syrup
Top with sausage patty
Place egg on top.

That’s it. So easy and so satisfying.
