Angel Food Trifle – 4th of July Dessert

I love to try out new dessert recipes for 4th of July.  Of course, I always want something red, white and blue.  Last year I made a pie.  The year before that I made a cake (I am still very proud of this cake).

This year I am sticking to the red white and blue dessert theme but I am going VERY simple.  I’m making an angel food trifle.  This dessert could not be easier!  I buy strawberries and blueberries and clean them.  I buy an angel food cake from the bakery section of the grocery store.  I even buy Cool Whip.  I’m slightly ashamed of that but my husband loves Cool Whip and sometimes you have to compromise.  Right?

You can easily make this dessert more complicated/impressive.  Make your own angel food cake (time consuming) and make your own whipped cream (very simple).  I wanted to grill and hang out so I took the easy way out.

I cubed 3/4 of the angel food cake.  I picked out strawberries that were close to the same size and halved them.  I sliced the remaining strawberries.  Then, I just started layering.

The most difficult part is arranging the strawberries and blueberries that will show from the outside.  I used the halved strawberries for the “decoration.”  I alternated strawberries and blueberries…  then in the next layer I alternated them again, so regardless of whether or not you are looking top to bottom or left to right you would always see the alternating pattern.  This is just my own OCD kicking in.  You can decorate however you want of course.

Serves A Crowd

Ingredients:
1 Angel Food Cake
1- 8 oz container Cool Whip
Strawberries (about 2 pounds)
Blueberries (about 2 pints)

Remove ¾ of the cake from the container and cube (you can freeze the remaining cake for another use).
Layer ½ of the cake cubes in the trifle bowl.
Slice the prettiest strawberries in half and arrange in the bowl so they are seen from the outside.
Place a blueberry in between each strawberry.
Layer 1 cup of sliced strawberries and about ¾ a cup of blueberries on the cake.
Spread half of the Cool Whip on the fruit.

Repeat arrangement of halved strawberries and blueberries around the bowl.
Fill with remaining cubes of cake.
Spread another cup of sliced strawberries and ¾ cup of blueberries on top of the cake pieces.
Spread remaining Cool Whip on top.

Decorate the top with a few blueberries and strawberries.
Use a big spoon and serve a heapful of trifle!
