Chocolate Chip Cookie or Brownie? No Need to Decide!

The first time I heard of this treat was when the host of the show Cheap Eats went to a St. Louis bakery, Pint Size Bakery, for a snack. He ordered a Brookie – which is a chocolate chip cookie baked inside of a brownie. Sounds like heaven, right! Not only did I have a new treat I wanted to eat, I had wanted to try this particular bakery for quite some time so this just added fuel to the fire.

Skip ahead a couple weeks; it was March 14th or as we know it Pi Day. If you aren’t a fan of math 3.14, or pi, is a pretty important number… but I actually am a fan of math… and a fan of food. Now that I think of it, this should probably be my favorite day of the year, but I’m getting off track.

Anyway, I’m not a pie person. I’m a cake person through and through.  But, I will never turn down a good excuse to eat dessert, especially on a random Tuesday. So, I figured this was the perfect day to try Pint Size Bakery. My girls were on Spring Break and it would be a fun treat to get some pie for pi day. Well, as luck would have it (for me) they had just run out of pie. We would have to get something else! The girls each got a cupcake and I got a brookie. YUM!IMG_5014

Fast forward again… it was a rainy weekend and we had things to do around the house. Kind of a bummer weekend. I felt bad the girls were cooped up and we were busy with little fix-it lists. So, we decided we could at least make a fun dessert. One of my daughters asked if we could make a brookie. Well, I had a box of brownie mix in the pantry (since I always seem to overstock those if you remember from a previous post) and I had a store bought package of cookie dough in the fridge. Brookie it is! Easiest recipe ever and I didn’t even have to leave the house!IMG_5166

You can make all your components from scratch if you want but this was so simple and so delicious I don’t know why you would. Ghirardelli Chocolate Supreme is my favorite brownie mix and I simply can’t make a better chocolate chip cookie than the break and bake Nestle Toll House package so I don’t bother trying. I’m totally comfortable admitting this. And I really prefer the mini size. As luck would have it, they are perfect for making brookies at home with your kids.

I lined a muffin pan with cupcake liners. We mixed up our batch of brownies and filled the cupcakes about ½ – 2/3 full. As you can see, I didn’t use all of the brownie batter but I used most of it.IMG_5171

We kind of smashed the break and bake cookies a little.

Placed the cookie in the middle of the brownie and pushed down a bit.

Bake them off and devour.

 

I had the girls taste them and I recorded their critiques. I’m sorry, but I couldn’t help but share them because they crack me up! Mind you, I called them up from playing for this taste test so they weren’t exactly “camera-ready” but we don’t care. With stickers and princess accessories to boot, here are some reviews of our brookies:

 

As you can see, you may need to work on your perfect ratio of brownie to cookie. It is a very personal preference.

Makes 12

Ingredients:
1 box of Ghirardelli Chocolate Supreme Brownie Mix
(1 Egg)
(1/4 c Water)
(1/3 c Vegetable Oil)
12 Nestle Toll House Mini Chocolate Chip Break & Bake Cookies

Preheat oven to 325

Line a muffin tin with cupcake liners.
Prepare the brownie mix according to the package using the egg, water and vegetable oil.
Fill the cupcakes about halfway with brownie batter. (*I filled an ice cream scooper about 2/3 full so they would come out even)
Break off or use a butter knife to separate 12 mini chocolate chip cookies from the package.
Use your fingers to flatten out the cookie dough a bit.
Place the cookie dough in the middle of the brownie and press down slightly.
Put in the oven and bake for about 30 minutes or until the brownie is cooked.

Let cool for at least 10 minutes if you can wait that long, then devour!

Notes

If like E you think this is "too chocolatey," you can make 15-18 brookies instead of 12 so the brownie to cookie ratio is more equal.
